Well this particular buttermilk dressing will take very little time to whip up.This dressing is well seasoned with a light and creamy texture containing very little fat.It has the richness of buttermilk, the tartness of fresh lemon,spicy mustard powder and the sweetness of sugar.Also including the smoothness of olive oil to help emulsify and lastly just a touch of shallots and poppy seeds. This comes together to create a refreshing dressing that would be delicious on romaine or butter lettuce along with fresh ripe tomatoes topped with cooked chicken and sunflower seeds.Or if your someone that is a little more adventurous it can be used as a light sauce for a pasta dish or drizzled on cooked vegetables.The possibilities are endless when you create your own dressings at home. Lemon Poppy Seed Buttermilk Dressing

1/2 tsp mustard powder
2 tbsp (low-fat or full-fat) buttermilk
2 tbsp fresh lemon juice
1 tsp granulated  sugar
1/2 tsp salt
2 tbsp extra virgin olive oil
1/2 tsp minced shallots
1 tsp poppy seeds
 

With a small bowl,I whisked together the mustard powder,buttermilk,lemon juice,sugar,and salt until smooth and granules  were fully dissolved.



While whisking constantly, I slowly drizzled in the extra virgin olive oil until emulsified. Then I stirred in the minced shallots and poppy seed.Must be used right away or can be refrigerated with a cover for up to 2 hours then whisked again to re-emulsify before serving.
